Antioxidants are compounds that inhibit oxidation, a chemical reaction that can produce free radicals and chain reactions that may damage the cells of organisms. Antioxidants such as thiols or ascorbic acid (vitamin C) may act to inhibit these reactions. To balance oxidative stress, plants and animals maintain complex systems of overlapping antioxidants, such as glutathione.
The only dietary antioxidants are vitamins A, C, and E. The term antioxidant is also used for industrial chemicals added during manufacturing to prevent oxidation in synthetic rubber, plastics, and fuels, or as preservatives in food and cosmetics.
Antioxidants have a variety of uses in industry. They are most commonly used as food preservatives and supplements. The industrial and other antioxidants uses can be summarized as follows.

Natural Antioxidants and Synthetic Antioxidants
These preservatives include natural antioxidants such as ascorbic acid (AA, E300) and tocopherols (E306), and synthetic antioxidants such as propyl gallate (PG, E310), tert-butylhydroquinone (TBHQ), butylhydroxyanisole (BHA, E320), and butylhydroxyanisole. Hydroxytoluene (BHT, E321).
Antioxidant 168 CAS 31570–04–4 is a phosphite antioxidant with excellent performance. It has strong extraction resistance, is stable to hydrolysis, and can significantly improve the light stability of the product. It can be used in combination with a variety of phenolic antioxidants.
Antioxidant 1010 CAS 6683–19–8 has a chemical name: tetrakis[β-(3,5-di-tert-butyl-4-hydroxyphenyl)propionic acid] pentaerythritol ester. It is a white crystalline powder with stable chemical properties and can be widely used in general plastics. Engineering plastics, synthetic rubber, fiber, hot melt adhesive, resin, oil, ink, paint and other industries.
Some fats (e.g. olive oil) are partially protected against oxidation due to their natural antioxidant content, but are still sensitive to photo-oxidation or light-induced oxidative damage.
Antioxidant preservatives are also added to fat-based cosmetics such as lipsticks and moisturizers to prevent rancidity. In addition, the use of antioxidants reduces the waste of raw materials and broadens the range of fats that can be used in specific products.

Antioxidant applications in industry
A number of industrial products contain antioxidants. Some of these include.
Antioxidants are added to fuels and lubricants to prevent oxidation, and antioxidants are added to gasoline to prevent polymerization — a polymerization of gasoline that can produce residues that can damage engines.
Antioxidants are added to polymers such as rubber, plastics and adhesives to prevent them from being damaged by oxidation and losing their strength and flexibility. Polymers with double bonds are particularly susceptible and benefit from such additions.

Additives such as AO-30, 31, 32 and 37 are added to jet fuels and gasoline, including aviation gasoline.
